Emilio Innobar


At the heart of Palma, right by the hotel HM Jaime III, you’ll find Emilio Innobar. The cuisine is a subtle blend of Mexican, Asian and Mediterranean flavors, which Emilio Castrejón, the head chef, has named Fine Fusion. Before starting his own restaurant, Emilio Castrejón had worked as a chef in the USA, Germany and in Japan. It was in Japan he learned how to slice fish for both Sashimi and Tataki like a native. Influenced by his travels around the world Emilio set out to change contemporary haute cooking by successfully mixing the intense and exotic flavors of the Asian cuisine with the bold qualities that both the Mexican and Mediterranean kitchens are known for. He named the result Fine Fusion. Since Emilio only work with fresh, high-quality ingredients, the menu at Emilio Innobar is ever changing. The contents will vary depending on which fresh produce is available at the local market. Although, you’ll always find a selection of Sashimi, Tataki, and Ceviche based on tuna, salmon, prawn and a variety of white fish. There is always a few delicious meat dishes available as well.
